Sunday Supper Series: Chicken Adobo with Pumpkin and Acorn Squash






Chicken Adobo, a classic traditional filipino dish, is one of those dishes where each family has their own interpretation of it. It traditionally consists of simple and minimal ingredients including soy sauce, vinegar, garlic, bay leaves, peppercorns and sugar. Wanting to incorporate seasonal ingredients, we decided to throw pumpkin, acorn squash, and fingerling potatoes into the mix.

After the chicken had been simmering with all the flavors and spices, we served it over rice making for  a totally flavor bursting (literally flavors were bursting from every which way) and fulfilling meal. This was one of the dishes where you could taste the love that went into it from every aspect, one of those that feeds your soul. The acorn squash and pumpkin provided bold fall flavors with a nice and mild sweetness. I could not have imagined a better way to integrate American and seasonal ingredients into this authentic Filipino staple.
